current Chinook Whole hops have an AA rating of 13%, so using whole hops instead of pellets you can use a full ounce and it will approximate 1oz of pellets at 12% AAU

krausen is bubbling out the blow-off tube, it's a vigorous fermentation. (lucky for me I decided to use a blow-off tube with this batch)

Special B Grain not available at the shop, have substituted Victory Grain instead. *recommended by the guy at the shop as a working substitute.

Primary Fermentation seems to have slowed down today, Krausen has fallen.

racked to secondary, added 1oz of Chinook Hops. had to put blow-off tube back on the fermenter as it returned to vigorous fermentation. now even 24 hours later it is still pushing out of the blow-off tube.
next time I will make sure to wait another few days before moving to secondary fermentation.

Have Begun Oaked Arrogant Bastard today.
again substituted Victory Grain for Biscuit (it was biscuit in the first one also).
starter I made thursday didn't take off as planned, hopefully there will be activity early tonight or tomorrow.
made starter with 1/2 cup of Light DME in microwave. had to use the two 3 gal carboys for this batch. will rack to secondary next saturday and add the Chinook hops and Oak Chips.

it seems making a starter is definitely the way to go. the primary fermentation took off sometime last night, it's 9am and it's vigorously fermenting already. so I'm going to brew again on Tuesday, therefore I have the Irish Ale starter already sitting on the table ready to go.

Fermentation is now overflowing out of two 3 gal carboys.
wow. this thing is unbelievable, I don't know if it's the yeast or the ingredients. when aerating the wort it foamed up more than anything I've ever seen, and I actually lost some volume during the transfer.

must bump the hops for the boil, there is almost no hop flavor in this beer. dry hop I can taste in the oaked bastard, the first batch didn't sit in the secondary long enough. on opening the bottles they have excessive foam and is very sweet.
