Victoria Bitters

Or as close as I can get anyhow...

6# 2-row
1# Crystal 20
3# Sucrose (yep...table sugar)
1oz Norther Brewer @ 60 Min
any clarifying agents you desire
1 Vial American Lager Yeast (WLP840)


Mash in w/8.75 qt water @ 165.9F, hold 154.0F for 60 min.
Mash out w/4.9 qt water @ 196.6, hold 168 for 10 min.
Sparge with 4.68 GAL of water


Boil for 60 min.
EST. O.G.: 1.060

Ferment: Let temp rise from 57 to 64 degrees over the course of 10 days or so. Let the Temp drop 5 degrees per day until Lagering temp is reached: 33 Degrees for 28 days.

Keg or bottle as normal, and serve very cold...
